Honey Wafer Cookies

My expertise in the culinary art is eating, and I'm very good at it. These are semi-crunchy cookies.

Honey Wafer Cookies
½ c. butter (not margarine) 
1 ½ c. flour
¾ c. white sugar                   
¾ tsp. baking soda
1 egg                                   
Pinch of salt
1/3 c. honey

Cream together the butter, sugar and egg. Sift together the flour, baking soda, and salt. Add the creamed ingredients and blend well. Add the honey and mix in.

Line a cookie sheet with parchment paper (this is important because the sugar/honey content of the dough makes it stick easily to an unlined sheet). Drop dough by heaping teaspoonfuls on the lined sheet. Bake at 350°F for 10-12 minutes.

Makes 4 dozen 3” cookies. These freeze well, and the recipe can be doubled.
