First marinade is good for pork chops, pork tenderloin and so forth. I cooked chops on the grill and thought it was great.
6 pork chops
1/2 cup honey
6 Tablespoons soy sauce
3 Tablespoons lemon juice
2 teaspoons minced garlic
Marinade for 5 + hours.
Second marinade is for chicken. I also cooked the chicken on the grill. This marinated 6 chicken thighs. Be careful that the coals are not too hot. The skin will burn.
1/4 cup olive oil
1/4 cup lime juice + zest of 2 limes
2 Tablespoons honey
1 teaspoon kosher salt
1 teaspoon black pepper
1/2 teaspoon cayenne
Marinade overnight to get the best flavor.

Hi Baker, you talk of coals, so do you use a Weber type bbq? I have a friend who had a fancy grill and went back to the Weber, said the grilling tastes better...

Jen, I am not a grilling expert. I just have a garage sale grill that I paid $5 for. It's square with a lid and legs. I may grill 1-2 times a year at home. The weather was great yesterday, so it sounded good.
