Pecan Pie

Pie baking day! I pulled out my local bee club's cookbook and found this:
Kristi's Pecan Pie
1 C. Honey
3 eggs, well beaten
2 T. sugar
1/2 c. soft butter
1/4 c. nonfat dry milk
1/2 tsp. vanilla
1 1/2 c. pecan meats
1 9inch pie shell
Combine honey with the eggs. Cream together butter, sugar, and dry milk. Add to the honey mixture. Stir in pecans and vanilla. Pour into pastry shell. Bake 345 degrees for 1 hour.
It's in the oven.

Hi Baker :) This recipe looks very intriguing, however, to me you would have to have a certain kind of honey to pull it off. Such as our local black oak honey is way to pungent for pecan pie. But 1/2 hour up the freeway is Vetch honey which is light and sweet.

Hi Jen, I just used my honey that was on the counter. My honey is just a combination of different floral sources. We call it "wildflower" honey. I will never make another pecan pie with karo syrup. The pie with honey wasn't sticky in texture or overly sweet.

Okay then, I'm gonna try that this month, pecan pie with honey. I would have never thought... because I would imagine the honey being runny or sticky... but it has eggs in it.. makes sense ;)
