Title: Fruit salad
Post by: Bakersdozen on June 09, 2021, 08:04:35 am
This seems to keep appearing in my refrigerator.  :D
Actually it's very refreshing and keeps for several days in the refrigerator.  I like to let it set in the refrigerator an hour or so before eating.

Fruit Salad
Dressing
1/3 to 1/2 cup honey
zest and juice of 2 limes
Mix prior to cutting fruit.

Fruit
3 apples, mixing varieties of apples adds an interesting combination but not necessary
grapes, leave whole
kiwi, peeled and cut
blueberries
cantaloupe or honeydew
strawberries
any other fruit in season that sounds good

Dice all fruit into bite size pieces.  Add the dressing and toss the fruit to coat.  Toss apples immediately with the honey dressing to prevent browning.
I always end up with a larger bowl of fruit than I anticipate so I always use 1/2 cup of honey when making the dressing.

My mom made this with our supper tonight and it was absolutely delicious!  She used a little more honey and also added some powdered sugar, since to our taste it was a little sour (could also be our limes).  She forget to get grapes, so we didn't have any of those in, and she also added a little bit of mint.  It was so good!  She made up a recipe card for it and everything.  :)

Looks delicious!   I have thought about adding mint.  Good to know it was a good addition.  Simple isn't it?  I am going to make this for a baby shower on Saturday.
