Honey Cinamon Roasted Pecans

lots of recipes for these, mostly using white or brown sugar and egg whites........this one's pretty good!!!
love these, so addicting!  can also use almonds or walnuts, but my fav are pecans.  my grandparents grew pecans in oklahoma when i was a kid growing up, i have an old recipe from my grandmother on these, but using sugar. when we were in alaska, there was a vendor in talkeetna along the talkeetna river selling them, i stocked up for the remainder of our trip........... ;D



Ingredients:

 6 cups raw pecans  (no salt)
 1⁄2 cup honey
 1⁄3 cup butter
 1 to 1 1/2 teaspoon cinnamon (can use more to your liking, up to 2 to 3 teaspoons.)
 1 teaspoon sea salt


Directions:

Melt together honey and butter. Remove from heat and mix in cinnamon and salt. Pour over nuts and mix well. Spread mixture on jelly roll pan/non stick cookie sheet and bake at 350 degrees for 15-20 minutes, stirring a few times during bake time. Spread mixture onto wax paper and cool completely. Break nuts apart and store in airtight container.

these can also be roasted using a slow cooker, but i have never tried it:

directions for slow cooker roasting:

Combine nuts and cinnamon in a medium bowl. Add honey, toss to thoroughly coat nuts. Add the cinnamon-honey coated nuts to the slow cooker, being sure to get all the honey in. Cover and cook in the slow cooker for 1 to 1-1/2 hours on low.

 They are addicting, I could eat them until I get sick so I have to stay away from them except at holidays.

I  make something very similar except the proportions are slightly different and I cook the butter, honey and cinnamon on the stove top for 2 minutes.  I line my sheet pan with foil for easy clean up too.

A few years ago, we had some men come in and harvest the pecans on our trees.  They took away 2900 pounds of pecans in the husks.  That translated to about 900 pounds of good pecans.  They gave us fifty cents a pound for those pecans.....And, what do they cost in the stores?

That is a great sounding recipe RB.  :-)

wow lee, "what do they cost in the stores" a little more.......A LOT more than fifty cents a pound! 
it is good stuff, just addicting! if i have some made up, i like to throw some in a ziplock with an apple and stuff in a pocket when i go fishing.

RB, we haven't harvested for the past couple years and prolly won't in the future.  If we do, I'll let you know.

We have a few wild pecan trees, they are small pecans but have a real good sweet flavor. The problem here is beating the crows and squirrels to them. >:( Jack
