Will the bees cap sugar syrup?

you bet. once they dry it down to 18.5%ish moisture they will cap it.

Will it turn golden like capped nectar does?

It depends on if the bees have mixed it with nectar, it may have a LIGHT golden color, and the taste will also be very faint of honey
