Wife and I canned 14 quarts and 32 pints of them yesterday and today. Still had enough left to make 4 pies, plus saved a half dozen to bake. Should last us for at least 2, maybe 3 years.

HMMM, HMMMM GOOD STUFF!  love sweet potatoes! i would like to grow them up here next season, we haven't because i am the only one that eats them.

iddee what is your recipe for canning them? 

iddee:
Peel, cube, and pack in jars. Cover with 1 to 1 sugar syrup. Process at 10 lb. pressure for 70 minutes for pints, 90 minutes for quarts.

Hot, baked sweet potatoes, marked with slits and with honey dripped over them is one of my favorites. YUMMY!
