Sweet potatoes

Ditto, or chunked and baked with coconut oil and cinnamon and honey wow. ;D

Mom used to make a casserole with mashed sweet potatoes, crushed walnuts and crushed pineapple covered with marshmallows. YUMMM!

cbt, want that recipe using coconut oil!  plz?  this would be awesome on the grill! do you just toss the tators in coconut oil?

neil casserole? 
here's mine........a fishing friend/guide gave it to me........hmmm good stuff, used pecans instead of walnuts: 

3 cups cooked sweet potatoes (okay you can use store bought canned) or you own canned sweet tators
1 cup sugar ( i use honey about 1/2 cup?)  sort of a wing it thing!
2 eggs
1 tsp vanilla
1/2 cup milk
1/2 cup butter
(you can add whatever spice you, cinnamon, etc........)

combine above and place in casserole baking dish.

in a separate bowl mix up the following ingredients:

3/4 cup of flour
1 cup chopped pecans or just leave them whole and add more..........(i love pecans!)
1/3 cup softened butter
1 cup light brown sugar

top the sweet potatoes with this mixture and bake the whole works at 350 D F for 30 to 40 minutes.  you can broil the last few for a little more crispy top if you desire.

there won't be anything left, and if there is...........send the non slobbered leftovers to me................ ;D
