Title: Snack Mix
Post by: Bakersdozen on November 17, 2015, 08:03:17 am
I adapted this recipe after watching someone on the Food channel do something similar.

Seed and Nut Snack Mix

2 T Butter
2 1/2 cups of any seeds or nuts, will explain later
2 T sugar
 1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice
1/4 tsp cloves

Melt butter in a large skillet.  Add seeds and or nuts.  Coat seeds and nuts with the melted butter.
Mix the remaining ingredients together and sprinkle over the coated seeds and nuts.  Pour onto a sprayed or oiled baking pan with sides.  Spread seed and nut mixture out as much as possible.  Bake at 400 degrees for 10-15 minutes.

When completely cooled, you can add stir in items like dried fruit, baking chips, coconut, etc.

I doubled in the recipe and cleaned out my freezer with the odds and ends nuts and seeds that were leftover.  I had pumpkin seeds, slivered almonds, whole almonds, hazelnuts, sunflower seeds, and pecans.  After the mix cooled, I stirred in the four(!) open packages of dried cranberries that I found and a partial bag of white baking chips.  I also added dried plums and dried pineapple.  Store in a ziplock or canister.  If it's too sweet for your tastes, consider adding pretzels.

I think small bags of this mix would make a healthy stocking stuffers.
