Saw some local honey in several places as I traveled the last few days and saw some interesting stuff. One particular jar looked strange. It was a quart jar and the bottom 1/3 appeared tone some kind of wax sludge. It looked like they might have put cappings in the jar and it sunk to the bottom. Why? None if the other jars looked this way. I guess it could be crystallizing honey in an older jar.

I think the cappings would float.. Mine usually do in the settling tank, just scrape them off the top..

Beginning of crystallization.

First thing I thought of too. Look like these jars from my harvest last season?

That's pretty much it, Blue. I expect that's what was happening, but it didn't look as smooth as yours. I thought that it would be more uniform all over, but I guess not. I didn't buy any while I was out, but wish I could have found the source and met those beeks. Maybe someday.

Might have been two different types of nectar that did not get mixed well. Some nectar will crystallize faster than others, and some is course while some is fine textured.

and it may have been chunk honey and the wax melted......

This looks identical to a jar I have of last year's honey. It's starting to crystalize.
