This is delicious.
Ingredients
1 cup grated mozzarella
1 9-inch prebaked deep dish pie shell
1/2 cup chopped green or vidalia onion
10 fresh basil leaves, chopped
4 tomatoes, peeled and sliced
1 cup grated cheddar
1 cup mayonnaise
3 or 4 slices of bacon (or ½ cup bacon bits)
salt and pepper
1 teaspoon sugar (optional)
Directions
Preheat oven to 350 degrees.
Slice the tomatoes. Place the tomatoes in the collinder to drain.
Cook bacon until crispy. Allow to cool and break into small bits.
Mix mayonnaise, cheddar cheese, mozzarella cheese, bacon, salt and pepper.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper.
Sprinkle the sugar if used.
Spread the mayonnaise and cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
Cut into slices and serve warm but it is very good cold.

I've never tried it but a friend says it is good using green tomatoes as well.

I am not a tomato fan, but that sounds REALLY good. I'll have to try this. I am sure the wife will love it even if I don't... but the way it sounds I might!

I love tomatoes. I think there are two things that money can't buy: True love and home grown tomatoes. I will try this recipe.
