Title: Dark Honey Cake
Post by: Bakersdozen on November 03, 2014, 11:26:00 am
Here's a nice chocolate cake that's not overly sweet, but is moist.  I opted for whipped cream instead of icing.  Thus would be good with some fruit like strawberries.

Dark Honey Cake
1 3/4 cup honey
2/3 cup shortening
2 eggs
2 1/2 cup flour
2 tsp baking soda
1 tsp salt
5 Tablespoons of unsweetened cocoa
1/4 cup water
1 tsp vanilla
1 1/4 cup ice water

Cream shortening and honey in a mixing bowl.  Add eggs.  In a separate bowl combine 1/4 cup water and 5 T cocoa to form a smooth paste.  Mix cocoa paste into mixing bowl with shortening and honey.  Measure dry ingredients and add small amounts to shortening/honey alternating with 1 1/4 cup ice water.
Pour into 9x13 greased pan.  Bake at 350degrees for about 30 minutes or until done.
