That is the result of a man doing a lot of work and taking pride in his finished product.  I like a wee bit of sage in sausage, but our secret ingredient is a bit of cumin powder or seed.

I suppose you are going to smoke for hours.

What kind, brand, is the smoked, and do you like the smoker?  Obviously, I am thinking of purchasing one.

No sage in the summer sausage. Sage in all the rest. Marinated over night, Smoked for 10 to 12 hours. The electric smoker is a 40 inch Masterbuilt.
