Title: They just drew out 10 frames ..... Should I add a super?

that new hive I set up with that captured swarm is really crankin.  They have built out all 10 deep frames with comb on the waxed foundation.

  Should I just let them build up the colony or should I put on an excluder add a super and see if the want to draw more comb while they are on a role? 

Or is there any other things I should do instead?

Is it just one deep hive?
If it is I would let them drawn another brood box then add super with excluder.
I live in a different climate than you though.

Add another deep box and forget the excluder.  I use them only when I'm running single deeps; you may get a little brood there but they will normally backfill it with honey before the season is over.

With you being in Florida and with your very short winter dearth if you wanted more honey you could keep the hive as a single and put on the honey super. In northern climates one would want to have the bees more prepared for the long winter dearth.
