Hmmmm
I watched the video about how to recrystallize your honey and I appreciate that he recommended transferring the honey to a glass container.  But I never recommend the microwave when asked how to recrystallize honey.  But the matchstick test? Has anyone tried this?

Agreed, why destroy those delicate enzymes?

I have, and it amounted to nothing for me.  I had some honey once that was kind of suspect, so outside on a drizzly day I ignited some of that honey, some honey I knew was pure, and some 2:1 sugar water, and all burned the exact same way.  I also feel like if it was that easy to tell fake honey from real, we wouldn't have so much adulterated honey sneaking onto the market.
