i do occasionally make my own bbq sauce yankee and like bakers i really don't use or a follow a recipe, taste and dump method.....and experiment.
i don't like ketchup. tomato base, better yet chili sauce based, or almost salsa like. we have canned tomatoes, juice, salsa and chili sauce from tomatoes and peppers from our gardens and i have used them all for a base. i have never canned bbq sauce though. my favorite is to use a chili sauce base for a bbq sauce.
add honey, worcestershire or soy sauce, olive oil, onion, garlic, sea salt, pepper blend (we use chicago steakhouse), or an addition of a hot pepper for a little spice (cayenne/chili flakes), mild chili powder~ ancho. a smoky paprika. a little prepared mustard. cilantro, maybe some liquid smoke, or other flavoring if desired. instead of cidar vinegar or vinegar, alcohol....... like bourbon or whiskey or whatever!....
sorry, this doesn't help, i have no exact recipe to offer, but if i were canning the bbq sauce i'd be using chili sauce for the base......i think chili sauce works well with honey, and a better flavor, much better than ketchup, just my HO.
