Most beekeepers when it comes to bottling honey will leave the honey sitting in the bottling tank for at least overnight if not longer to allow the air and foam to rise to the top so it can be skimmed off. We get honey from a plant that is called Knapweed, It is very bitter and the honey has a bitter after taste but leave the pail open for 3 weeks to a month and most of the oils will evaporate out leaving the honey palatable.

Just another possibility... Could it have been something with the jar?  Poor water used to clean? Bad air in jar?

It is a fairly common occurrence. Every year while judging honey I will find sense in the honey that you don't expect. some are nice surprise like lavender, or a nice mint. Some can be a little harsh but most can be tamed down through letting the honey breath before bottling it. If letting it breath doesn't give you the results you like it can be blended with a better tasting honey. do a sample on a small scale to begin with to see how much honey is needed to blend out the taste.

Did you use any chemicals like "bee go" to help you remove the bees from your frames while taking off the honey?  They tend to leave a terrible smell in the honey (to me it smells like vomit)for a while. But the smell dissipates after a few days and leaves the honey totally unharmed.  Even the natural floral fragrance of the honey returns after the chemical smell goes away.
Like all the others have said one way or another, a little patience will go along way.
MOST CERTAINLY, DON'T THROW OUT THE HONEY!!!

Yes I used fishers bee quick or gone.  But I would have been happy if it smelled like that product.  It smells like almond extract and it also worked great.

A pail of honey will have a distinct odor to it some more pleasant than others.  I'm guessing your honey is just fine if it tastes ok.  I have a refractometer and test the honey at the start of every extractions and at the end.  If its running a little high I will set it aside in the bucket and wait for a round that comes in low and blend the 2 to get the moisture in range.  This has worked well for me.  I haven't had anything ferment this way but have some honey that would stink up the honey house at times.

I opened one of the hives yesterday and the smell ( and the resulting honey I originally wrote about ) is coming from that one hive.  They musta just found a unique source that produced that smell.  I might take the uncapped frames and spin it out and make them start over.

Bad smelling/tasting honey makes great winter fare for the bees.  It is valuable to you and your bees.  :)

Ohhhhh I gotcha ....... I always hear you guys talk about feeding it back to the bees but I was thinking " why would I want them to take this smelly honey and put it right back in the super? " if I save it I can let them eat it when they are not foregoing in the winter.  Got it

put it back on after you pull honey and the first frost hits.  They will pull it down and put it in the brood box to back fill if they have room

Just make sure you keep SHB and Wax Moths out of it!

Very good thought.  I would run through the freezer when pulling or keep it there until a couple days before you intend on putting on hive
