If there is enough moisture I don't see why not.   Would it be any different than granulated sugar?

Hmmmmmm.
One of my last pails of honey I had tabbed at 19.5% so I set it aside to bring down the moisture level. I just went to work with it and it is as solid as a rock.

Well.....   If it is solid as a rock, I would guess the moisture level is no longer 19.5%.

If you see no foaming or off coloring, which I doubt you do,  or any foul smell I would say it is fine.

Would be interesting to heat it up to liquify and take a moisture reading :-\

like robo said perry, yes if the moisture content is high.  also pop the lid off, does it smell funny?

No off smell at all. My basement is not exactly the warmest place in the house, and honey sets up fairly quickly down there. I agree with robo, it will be interesting to do a moisture level reading when I go to re-liquefy it.

yes, i would be curious about the moisture level as well.

last year i set aside about a half bucket that i thought was too high in moisture content. i store them in the garage, they freeze. i pulled that bucket later to re-liquefy, before i heated it up, i popped the lid..........eewwww!  it had fermented.
