Kale Salad

I just finished making this and thought I would share.  I love kale and this is a very healthy way to fix it.

Kale Salad
Wash and de-stem a bunch of fresh Kale, chop the leaves into bite size pieces
Place kale into a large mixing bowl.
Seperately mix the following:

3 Tablespoons Olive Oil
2 Tablespoons apple cider vinegar
2 Tablespoons honey
1 teaspoon sea salt
1 1/2 tsp garlic powder or minced fresh garlic
1/4 +/- teaspoon cayenne
Optional: Add any of the following ingredients.
Green onions
raisins
dried cranberries
sunflower seeds
red onion
shredded carrots
peppers
tomatoes

Toss all ingredients together and refrigerate at least 2 hours before serving.  It will keep several days under refrigeration.

This is a very flexible salad.  If it sounds good mixed in, it probably will be.  I have also used different kinds of vinegar.  Today I used raspberry vinegar, because that's what I had.  I always omit the salt and don't miss it.

Looks good, might have to give it a go. We usually eat our kale in an old German/Dutch manner, all mashed together with mashed potatoes. Doesn't look so pleasant but tastes great.

i like mine cooked with baccon onion and garlic. ill give this a try once i have some ready. ty for the share!

The Irish do something similar.  Colcannon?

Usually I just sautee in a little olive oil with mushrooms, onions, red pepper flakes, chicken broth and seasonings.  Quick and hot.

Sounds similar to the Colcannon.
We always served it with smoked sausage called Rookwurst
