I've tasted it, wouldn't place it on my list of preferred honeys.  The fact that you can get used to just about any taste, doesn't mean that you really like it. 
On the other hand, buckwheat too deserves to be pollinated, so when it's out there flowering, I wouldn't distance my hives from the buckwheat field intentionally.  Your best bet is the hope that you'll get a mixed source of flowers for your "buckwheat honey" and the blend can be quite nice.

Like any honey depending on the purity of the buck wheat honey will effect the harshness of the flavor. I have had almost pure buckwheat honey and it has a very strong taste, scent, and after taste. Most of the store bought buckwheat I have tasted are a blend of canola and buckwheat and do not have nearly as sharp of taste

Have customers requesting buckwheat honey. One of my outyards has an acre of it planted. End of the month i will have some fresh supers on for just the occasion.

How many hives are in the yard? Any more than 1 or 2 and any buckwheat honey will be spread so thin between the hives you will have to look for dark cells to extract. Easy enough to see as long as you are not using black plastic foundation.

I plant about an acre of buckwheat every year, most times my honey is amber in color and i've had honey the color of motor oil. I sell it at the farmers market and not had a complaint, but i have had people ask when i'll have some more of that black honey :yes:. I usually get 3 blooms a year out of it, but this year i'll only get 2 because of the rain. I am going to disc it today and get my second bloom out of it and let the girls have it for winter stores.
