With honey would have about 240 lb capacity

Wonder if it would fill slow enough to prevent air in the honey pouring.

Where is variable speed on the auger, you have control of the air pressure and air flow on the regulator and there are air flow controls on each end of the push ram so it should be totally adjustable.
The way it looks to operate is it has 3 air rams.
One that opens to let product from the hopper into the product piston as the main ram pulls back.
It then closes to the hopper and the discharge plunger opens to allow the product out the dispensing nozzle as the main air ram pushes the product out the open nozzle. The dispensing cycle is activated by a foot pedal switch, so as long as your not tapping your foot to tunes on the radio you should have no accidents with honey on the floor.
It is designed to handle peanut butter so it should have no problem with honey.

To answer the question on air getting into the honey. As long as you do not try to suck the honey into the product cylinder faster than the honey can flow into the discharge, you should get no air using the filling mechanism. Using the auger would most likely pull the most air into the honey, if not careful. It the honey doesn't cover the auger it will pull air bubbles into the honey on each revolution, so have enough honey to cover the paddles when it is mixing and do not agitate while filling until you get to the last in the tank and then use the auger to move the honey down to the discharge.
