Infused Vanilla Honey
« on: July 14, 2024, 11:40:03 am »
Does anyone else make infused honey? I did an experiment last winter with vanilla beans. I found some beans that were old while cleaning. I don't know how old, but old. I experimented by putting a 1/2 bean in a small jar of honey. That was at the end of the year. Months later I tasted it and the flavor was only slightly noticeable. I got some new Madagascar vanilla beans from Penzy's Spices and am trying again. I took one bean and cut it into 4 sections, split them, and scraped out some seeds to get lots of flavor. I put each of the sections in a one pound bottle. Now I am playing the wait and see game again.
Penzy's is very expensive, but very good quality. A fellow beekeeper recommended Cook's vanilla beans from Amazon. He swore they were good quality and much, much less expensive. If I am successful with fresh beans I will look into Cook's vanilla beans.
