Curious! I was on the Fondant thread and it was suggested to make fondant with your own honey instead of glucose ~
What say you?

Good Morning Ray
Yes I do understand that part of the equation. But it would have to be the honey that came out of my hives. Any other honey could compromise the health of the hive. What if I didn't get any surplus honey this year?
And, in the other thread on Fondant, did you mean to make my fondant with honey instead of glucose?

Good afternoon Jen.
If you don’t have any honey use the glucose. You can buy it from a drugstore or try some hobby- lobby craft store in the cake decorating area. I use my own honey to make up my fondant. When you get enough honey from your hives save a quart.

Thanks Ray ~ This year Calif was in a severe drought. My bees worked real hard to get the amount of honey they got, each hive only has one medium super of honey on top. Supposed to be a long wet winter, really hoping for that ~

Okay Ray, thanks for that recipe
For winter feed I won't be putting in the Honey B Healthy, amino B booster, or the Mega Bee.
What is the consistancy of your fondant? Is it malleable?

This is the recipe I use from the bee club I belong with. Complete instructions. I add megabee and Amino B Booster to make it better.

This is very interesting Ray, haven't ever seen this formula before using your own honey. I Like It!
And for those of us that need help with a honey conversion chart, here is a good one
http://www.traditionaloven.com/conversions_of_measures/honey_measurements.html
So Ray, one pound of honey = 1 cup

Look again, Jen. 1 cup is 12 oz., or 3/4 lb.

I use a digital scale to measure out a pound. You can buy them at walmart for 10 dollars.

1 1/2 cup would be 18 oz. by weight, versus 16 oz., but in the recipe it would not make a noticeable difference. Maybe just a bit more pliable, if anything.

Okay
Now, when I add the honey to my fondant recipe, what are the chances of the honey crystalizing in the fondant in the hive? or does it matter?

1.. Not likely to happen.
2.. Won't matter if it does.
