Apple Crisp with Honey
Oven 350 degrees.
Streusel Topping
3/4 C. brown sugar
3/4 C. flour
3/4 C. Quick cooking Oatmeal
4 T. Butter, cold
1 C. chopped pecans, optional
Combine the ingredients, except pecans, and cut the butter in until it resembles coarse crumbs. Stir in the pecans. Set aside.
Filling
4 1/2 C. of peeled, cored, and sliced baking apples
Juice of one lemon or 2 tsp. lemon juice
1/2 C. honey
1 tsp. cinnamon
1/4 tsp. nutmeg
Toss apples with lemon juice to stop fruit from browning.
Mix apple slices, honey, cinnamon, and nutmeg. Pour apple mixture into a lightly greased baking dish. Top with streusel topping. Bake 25-30 minutes until filling is bubbly and topping is lightly browned.
