I grew up in New Orleans and the fishing is one of the things I do miss. Fished in waters where you could catch salt water and fresh water fish in the same spot. Some of my fondest summer memories are taking off every day with my buds to go fishing or crawfishing.

I've spent a fair amount of my retirement nest egg eating charbroiled oysters at Drago's (restaurant) in New Orleans
You ruin oysters by cooking them. A dash of salt while they are in the shell, then eat. Setting in the oyster bed with my hunting knife, a salt shaker, and a case of beer. NOW THAT'S LIVING.
